Grilled Spring Vegetables

Ingredients Checklist

  • 2 artichokes
  • 200g flat beans
  • 2 white zucchini, halved
  • 2 baby cos, halved
  • 2 tbsp olive oil
  • Sea salt & crackled black pepper
  • ¾ cup cottage cheese
  • 1 tsp chopped parsley + leaves to garnish

Instructions

  • To prepare the artichokes, remove the tough outer leaves, peel the stem, cut in half, remove the choke with a teaspoon and steam for five minutes.
  • Mix together the cottage cheese and parsley and place into a small serving bowl.
  • Mix together the dressing ingredients in a small bowl.
  • Preheat a BBQ to medium/high, coat the vegetables in olive oil, season with salt and pepper and grill until lightly charred.
  • Arrange the vegetables onto a serving plate and drizzle with the dressing. Serve with the cottage cheese on the side and garnish with parsley leaves.
