Ingredients Checklist
- 250g tuna, finely diced
- ½ small avocado, halved
- 1 cup edamame
- 5cm daikon length, finely sliced
- 1 ruby grapefruit, segmented
- 1½ cups cooked sushi rice
FOR DRESSING
- 1 tsp minced ginger
- 1 tbsp mirin
- 2 tbsp light soy sauce
- 1 tsp sesame oil
TO GARNISH
- 2 tsp wasabi
- 2 tsp pickled ginger
- 1 tbsp furikake seasoning
- Shiso leaves
Instructions
- Mix together dressing ingredients in a small bowl.
- Place rice in the base of the bowls and place the tuna in a mound to the side.
- Arrange the remaining ingredients in mounds and be mindful of balancing the colours.
- Garnish with wasabi, pickled ginger and shiso.
- Pour over the dressing and sprinkle with furikake.
