Quinoa Protein Bars

Ingredients Checklist

  • ½ cup honey
  • ½ cup coconut oil
  • ½ cup peanut butter
  • 2/3 cup brown sugar
  • 1 tsp vanilla extract
  • Pinch of salt
  • 1 2/3 cups oats
  • 1 cup puffed quinoa
  • 1/3 cup plain flour
  • ½ cup desiccated coconut
  • ½ cup dried apricot, chopped
  • ½ cup almonds, chopped
  • ¼ cup pepitas
  • ¼ cup linseed
  • ¼ cup cranberries

Instructions

  • Preheat oven to 180°C and line a 20x30cm baking tray with baking paper.
  • Place honey, oil and peanut butter into a microwave-safe bowl and microwave for one minute, whisk until smooth.
  • Add sugar, vanilla and salt and whisk to combine.
  • Add remaining ingredients and stir well to combine.
  • Transfer mix to the baking tray and spread out evenly.
  • Bake for 20 minutes or until golden.
  • Allow to cool to room temperature then place in the refrigerator for two hours to set.
  • Portion into bars and store in a sealed container at room temperature.
