Herb and garlic hasselback potatoes

Ingredients Checklist

  • ½ cup melted butter
  • 4 cloves garlic, crushed
  • 2 tsp fresh thyme leaves
  • 6 large washed potatoes
  • Sea salt flakes
  • Ground black pepper
  • Finely grated parmesan cheese
  • Extra thyme for garnish

Instructions

  • Preheat oven to 180°C. Line a baking tray with baking paper.
  • Combine the melted butter, garlic and thyme in a jug, set aside.
  • Lay potatoes on the flat side; cut slices across the top leaving the bottom intact to hold it together. If need be, cut a small layer off the bottom to make it sit flat.
  • Place potatoes onto the lined baking tray, generously brush with butter mixture, making sure that some butter gets between slices.
  • Season potatoes with salt and pepper, bake in oven for 30 minutes or till tender and golden.
  • Sprinkle with grated parmesan and return to oven for a further 5 minutes till golden.
  • Serve with extra thyme.
