Garlic and Thyme Roasted Potatoes

Ingredients Checklist

  • 1kg red skinned potatoes
  • 125g unsalted butter, melted
  • 4tbsp fresh thyme leaves
  • 1.4 cup chopped parsley
  • 4 cloves garlic, crushed
  • 2 tsp sea salt flakes
  • 1tsp cracked black pepper

Instructions

  • Preheat oven to 180°C.
  • Thinly slice the potatoes by hand or on a mandolin. Place potato slices into a large bowl and toss with the butter, thyme, parsley, garlic, salt and pepper making sure all slices are coated with the butter.
  • Gather up the slices of potato and arrange vertically in a large ovenproof dish or a cast iron pan. Pour any remaining butter over the top of potatoes.
  • Bake for 60 minutes in the oven or till potatoes are tender and deliciously golden and crispy.
