Ingredients Checklist
- 1kg red skinned potatoes
- 125g unsalted butter, melted
- 4tbsp fresh thyme leaves
- 1.4 cup chopped parsley
- 4 cloves garlic, crushed
- 2 tsp sea salt flakes
- 1tsp cracked black pepper
Instructions
- Preheat oven to 180°C.
- Thinly slice the potatoes by hand or on a mandolin. Place potato slices into a large bowl and toss with the butter, thyme, parsley, garlic, salt and pepper making sure all slices are coated with the butter.
- Gather up the slices of potato and arrange vertically in a large ovenproof dish or a cast iron pan. Pour any remaining butter over the top of potatoes.
- Bake for 60 minutes in the oven or till potatoes are tender and deliciously golden and crispy.
