Ingredients Checklist
- 1 cup fresh strawberries
- 3/4 cup (180ml) cream, suitable for whipping
- 1 tbsp mascarpone cheese
- 1/2 tbsp caster sugar
- 1 cup ready made meringues
Instructions
- Quarter and hull strawberries and place in a bowl, sprinkle over caster sugar until all the strawberries are coated. Set aside.
- In a separate bowl, whip cream using an electric mixer until soft peaks form. Stir through mascarpone cheese.
- Crush meringues using your hands. In a large bowl, gently fold together the strawberries, whipped cream and crushed meringue.
- Serve Eton Mess in individual jars or bowls, and top with extra strawberries.
