Easy Eton mess

Try this quick and easy dessert! Swap out the strawberries for other fruit such as mango, raspberries or passionfruit.

Ingredients Checklist

  • 1 cup fresh strawberries
  • 3/4 cup (180ml) cream, suitable for whipping
  • 1 tbsp mascarpone cheese
  • 1/2 tbsp caster sugar
  • 1 cup ready made meringues

Instructions

  • Quarter and hull strawberries and place in a bowl, sprinkle over caster sugar until all the strawberries are coated. Set aside.
  • In a separate bowl, whip cream using an electric mixer until soft peaks form. Stir through mascarpone cheese.
  • Crush meringues using your hands. In a large bowl, gently fold together the strawberries, whipped cream and crushed meringue.
  • Serve Eton Mess in individual jars or bowls, and top with extra strawberries.
