Ingredients Checklist
- 3 medium granny smith apples
- 1½ cups flour
- 1½ tsp baking powder
- 1 tsp salt
- 300ml soda water
- Vegetable oil for deep frying
- 1 cup caster sugar
- 1 tsp cinnamon
- Vanilla ice cream, to serve
Caramel Sauce
- 200g caster sugar
- 90g butter
- 125ml thickened cream
Instructions
- For caramel, place sugar in a medium, heavy based saucepan with 2 tablespoons of water over medium heat and cook until deeply golden in colour.
- Carefully add butter (as it will splutter), swirl to combine and cook for 2 minutes.
- Carefully add cream, stir with a rubber spatula until combined and allow to boil for 1 minute.
- Set aside caramel to cool to room temperature.
- Place flour, baking powder and salt into a medium bowl. Whisk to combine then gradually add soda water, whisking until smooth.
- Mix together caster sugar and cinnamon in a small bowl.
- Heat a deep fryer (or heavy based saucepan filled halfway with oil) to 180°C. Working in batches, dip apple slices in the batter and fry until golden and crisp. Set aside on a wire rack set over a tray.
- Coat each of the fritters in the cinnamon sugar.
- Serve fritters while warm, drizzled with caramel and with a ball of vanilla ice cream.
