Ingredients Checklist
- 200g watermelon, cut into bite sized pieces
- 200g honeydew melon, cut into bite sized pieces
- 1 watermelon radish, thinly sliced
- 200g haloumi, cut into bite sized pieces
- ¼ cup plain flour
- ¼ cup olive oil
- Sea salt & cracked black pepper
- 1 3 cup mint leaves
DRESSING
- ½ cup pitted
- Sicilian olives, roughly chopped
- 1 garlic clove, minced
- 1 tbsp white balsamic vinegar
- ¼ cup olive oil
Instructions
- Mix together dressing ingredients in a small bowl.
- Heat olive oil in a large non-stick frypan over medium heat. Place the flour onto a plate and dredge each piece of haloumi in the flour.
- Fry the haloumi until golden on both sides and drain on paper towel.
- To assemble, place melons, radish and haloumi onto a serving plate. Season with salt and pepper. Drizzle with dressing and garnish with mint leaves.
