Melon, Haloumi & Green Olive Salad

Ingredients Checklist

  • 200g watermelon, cut into bite sized pieces
  • 200g honeydew melon, cut into bite sized pieces
  • 1 watermelon radish, thinly sliced
  • 200g haloumi, cut into bite sized pieces
  • ¼ cup plain flour
  • ¼ cup olive oil
  • Sea salt & cracked black pepper
  • 1 3 cup mint leaves

Instructions

  • Mix together dressing ingredients in a small bowl.
  • Heat olive oil in a large non-stick frypan over medium heat. Place the flour onto a plate and dredge each piece of haloumi in the flour.
  • Fry the haloumi until golden on both sides and drain on paper towel.
  • To assemble, place melons, radish and haloumi onto a serving plate. Season with salt and pepper. Drizzle with dressing and garnish with mint leaves.
