Ingredients Checklist
DRESSING
- Juice and zest of 1 lemon
- 1 stalk lemongrass
- ¼ cup olive oil
- 1 tbsp honey
- ½ tsp sea salt
- ½ tsp cracked black pepper
SALAD
- 1 large honey dew
- 1 large Lebanese cucumber
- ½ small red onion
- ¼ cup small mint leaves
- 1 stalk lemongrass
Instructions
- For the dressing very finely slice the lemongrass then place the dressing ingredients in a screw top jar. Shake to combine dressing, set aside until ready to serve.
- Remove the seed from the honey dew melon then cut the honey dew melon and the cucumber into balls using a melon baller.
- Peel and finely slice the red onion then very finely slice the lemongrass.
- In a large bowl, add honeydew melon, cucumber and red onion. Toss to combine, then arrange on a serving platter or bowl.
- Scatter with mint leaves and sliced lemongrass.
- Just prior to serving, drizzle the salad lightly with dressing. Serve extra dressing in a jug on the side.
