Smashed Potato Gem Caesar Salad

Ingredients Checklist

  • 500g Potato Gems
  • ¼ cup melted butter
  • 1 garlic clove, finely chopped
  • 1 tbsp thyme leaves
  • 2 tbsp grated parmesan + extra to garnish
  • 2 baby cos lettuce, roughly chopped
  • 2 hard boiled eggs, roughly chopped
  • Sea salt

Instructions

  • Preheat oven to 200°C and mix together the melted butter, garlic and thyme in a small bowl.
  • Place potato gems on two baking paper lined oven trays and roast for 8 minutes.
  • Squash the gems with the base of a glass, lightly brush with garlic butter and sprinkle with parmesan.
  • Roast for a further 20 minutes or until golden and crisp.
  • Meanwhile, mix together the dressing ingredients.
  • To serve, toss the cos leaves in the dressing and place onto a serving plate.
  • Top with the crispy gems and scatter over the chopped egg.
  • Garnish with extra grated parmesan
