Scones
- 3 1/2 cups self raising flour
- 1 cup thickened cream
- 1 cup lemonade
To serve
- Whipped cream
- Jam
Instructions
- Preheat oven to 180°C. Line tray with baking paper.
- Combine self raising flour, cream and lemonade in a bowl and mix until combined. Try not to over mix as this will make the scones dense.
- Place dough onto a floured surface and knead gently, then pat into a disc shape 2.5cm thick.
- Use a 6cm round cutter to cut round shapes. Flour cutter in-between.
- Use a knife or spatula to scoop up and place onto lined baking tray, slightly touching each other.
- Bake for 14 minutes until golden on top. Place on a rack to cool. Place tea towel over them to avoid tops from getting crusty.
- Serve with whipped cream and your favourite jam!
