Basque Cheesecake

Ingredients Checklist

  • 750g cream cheese, at room temperature
  • 1 cup caster sugar
  • 1¼ cups thickened cream, at room temperature
  • ¼ cup flour
  • 1 tsp vanilla extract
  • 4 large eggs, at room temperature

Instructions

  • Preheat oven to 200°C (or 180°C fan) and line a 20cm springform cake tin with two layers of baking paper.
  • Beat the cream cheese in a stand mixer until smooth.
  • Add sugar and beat to combine.
  • In a medium bowl, gently whisk together cream, flour, vanilla and eggs until smooth, taking care not to incorporate too much air.
  • Gradually add the mix to the cream cheese and mix until combined.
  • Pour the batter into the tin and bake for 45 minutes or until deeply caramelised.
  • Allow to cool to room temperature before refrigerating overnight.
