Recipe - Zucchini Corn Fritters

Zucchini Corn Fritters by Foodland Recipe Kitchen

Ingredients

  • 3 medium zucchini
  • 1 cup corn kernels (fresh or canned)
  • 1/2 red onion, diced into small cubes
  • 2 eggs
  • 1/2 cup flour
  • 1 teaspoon baking powder
  • 1/4 cup parmesan cheese
  • Salt and pepper to taste
  • Olive oil

Equipment

  • Lined baking tray
  • 2 large bowls
  • Grater
  • Paper towel

Instructions

Zucchini corn fritters make a fantastic healthy lunch or snack, and are also great for school lunchboxes.

  1. Preheat oven to 200°C and line a baking tray with baking paper.
  2. Grate zucchini into a bowl and set aside.
  3. In a separate bowl, add the corn, onion, eggs, parmesan cheese and salt and pepper.
  4. Using a paper towel, press down onto the zucchini to soak up the excess liquid from the grated zucchini. Try and remove as much of the liquid as possible.
  5. Add zucchini to the other ingredients, add the flour and baking powder and mix together well.
  6. Spoon some of the mixture, and using your hands, roll into balls and place on a tray lined with baking paper. Add extra flour if the mixture is too wet.
  7. Gently flatten the balls slightly with your fingers to resemble a round disk.
  8. Brush with olive oil and place the tray into the oven to cook.
  9. Cook for 20 minutes or until slightly golden.
  10. Serve with your favourite dipping sauce or enjoy them as they are!
