Ingredients
- 3 medium zucchini
- 1 cup corn kernels (fresh or canned)
- 1/2 red onion, diced into small cubes
- 2 eggs
- 1/2 cup flour
- 1 teaspoon baking powder
- 1/4 cup parmesan cheese
- Salt and pepper to taste
- Olive oil

- Lined baking tray
- 2 large bowls
- Grater
- Paper towel
Instructions
Zucchini corn fritters make a fantastic healthy lunch or snack, and are also great for school lunchboxes.
- Preheat oven to 200°C and line a baking tray with baking paper.
- Grate zucchini into a bowl and set aside.
- In a separate bowl, add the corn, onion, eggs, parmesan cheese and salt and pepper.
- Using a paper towel, press down onto the zucchini to soak up the excess liquid from the grated zucchini. Try and remove as much of the liquid as possible.
- Add zucchini to the other ingredients, add the flour and baking powder and mix together well.
- Spoon some of the mixture, and using your hands, roll into balls and place on a tray lined with baking paper. Add extra flour if the mixture is too wet.
- Gently flatten the balls slightly with your fingers to resemble a round disk.
- Brush with olive oil and place the tray into the oven to cook.
- Cook for 20 minutes or until slightly golden.
- Serve with your favourite dipping sauce or enjoy them as they are!
