Recipe - Peri Peri Chicken & Rice

Peri Peri Chicken & Rice by Foodland Test Kitchen

Ingredients

  • PERI PERI CHICKEN
  • 720g chicken drumsticks
  • 4 x garlic cloves, crushed
  • 2 tsp chilli flakes
  • 1 x large lemon juiced
  • 1/2 tbsp smoked paprika
  • 1/2 tbsp sweet paprika
  • 3 tsp salt
  • RICE
  • Ben's Original Microwave Basmati Rice 250g
  • Canned mexican bean mix 200g
  • 1/2 tbsp salted butter
  • Salt to taste

Equipment

  • Small roasting dish
  • Bowl for marinating chicken

Instructions

  1. Place the chicken in a large bowl for marinating. Add all all the ingredients listed under ‘Peri Peri Chicken’ ingredients. Cover in gladwrap and allow to marinate for 30 minutes in the fridge.
  2. Once chicken has marinated, pre-heat oven to 200C and place the chicken in the roasting dish. Place in oven and roast for 15-20 minutes. Once you notice some colour on the chicken, flip each leg and allow to cook for a further 15-20 minutes so they are evenly coloured and cooked.
  3. Four minutes before the chicken is finished, microwave your rice. Place rice in bowl with butter and stir until melted through. Add the beans  and salt to taste. Stir through.
  4. Take the chicken out of the oven and serve up your chicken and rice evenly.
