Herb and garlic hasselback potatoes by Foodland Recipe Kitchen

  • ½ cup melted butter
  • 4 cloves garlic, crushed
  • 2 tsp fresh thyme leaves
  • 6 large washed potatoes
  • Sea salt flakes
  • Ground black pepper
  • Finely grated parmesan cheese
  • Extra thyme for garnish


  • Lined baking tray


  1. Preheat oven to 180°C. Line a baking tray with baking paper.
  2. Combine the melted butter, garlic and thyme in a jug, set aside.
  3. Lay potatoes on the flat side; cut slices across the top leaving the bottom intact to hold it together. If need be, cut a small layer off the bottom to make it sit flat.
  4. Place potatoes onto the lined baking tray, generously brush with butter mixture, making sure that some butter gets between slices.
  5. Season potatoes with salt and pepper, bake in oven for 30 minutes or till tender and golden.
  6. Sprinkle with grated parmesan and return to oven for a further 5 minutes till golden.
  7. Serve with extra thyme.
