Recipe - Garlic and Thyme Roasted Potatoes

Garlic and Thyme Roasted Potatoes by Foodland Recipe Kitchen

  • 1kg red skinned potatoes
  • 125g unsalted butter, melted
  • 4tbsp fresh thyme leaves
  • 1.4 cup chopped parsley
  • 4 cloves garlic, crushed
  • 2 tsp sea salt flakes
  • 1tsp cracked black pepper


  • Mandolin


1. Preheat oven to 180°C.

2. Thinly slice the potatoes by hand or on a mandolin. Place potato slices into a large bowl and toss with the butter, thyme, parsley, garlic, salt and pepper making sure all slices are coated with the butter.

3. Gather up the slices of potato and arrange vertically in a large ovenproof dish or a cast iron pan. Pour any remaining butter over the top of potatoes.

4. Bake for 60 minutes in the oven or till potatoes are tender and deliciously golden and crispy.
