Recipe - Chunky Choc Cookies

Chunky Choc Cookies by Minlaton Foodland

Ingredients

  • 170g salted butter
  • 1 cup white sugar
  • 3/4 cup light brown sugar
  • 2 tsp pure vanilla extract
  • 2 large eggs, room temp
  • 3 cups plain flour
  • 1 1/2 tsp baking soda
  • 1/2 tsp sea salt flakes
  • 2 cups roughly chopped chocolate (mix of dark and milk)

  • 2 large baking trays
  • Large bowl
  • Handheld mixer

Instructions

  1. Preheat the oven to 180C / 160C fan forced. Line 2 large baking trays with baking paper.
  2. Melt the butter in a large bowl.
  3. Add the sugar and beat until fully combined with handheld mixer.
  4. Add the eggs and vanilla and beat until smooth.
  5. Add the flour, baking powder and sea salt, then stir until 90% combined.
  6. Fold through chocolate chunks.
  7. Scroop balls of dough (roughly 1/4 cup) and set them on the baking trays at least 5cms apart.
  8. Bake for around 12-14 minutes, or until the edges are golden. Let them cool for 5 minutes before transferring to a wire rack to cool completely.
