Beer Braised Beef and Mushrooms by Foodland Recipe Kitchen

Serves: 6

Ingredients

  • 1kg braising beef, cut into large cubes
  • 200g smoked bacon, cut into lardons
  • 200g whole baby Swiss brown mushrooms, trimmed and cleaned
  • 4 cloves garlic, peeled and sliced
  • 6 golden shallots, peeled and cut in half
  • 6 sprigs of fresh thyme
  • 2 fresh bay leaves
  • 3 heaped tbsp flour
  • 425ml beer
  • Salt and pepper to taste

Equipment

  • Heavy cast casserole

Instructions

1. Preheat oven to 140°C.

2. Place beef, bacon, mushroom, garlic, shallots, thyme and bay leaves into a large bowl.

3. Using your hands toss the flour through the ingredients to coat.

4. Transfer to a heavy cast casserole, pour in beer and season to taste. Stir to combine.

5. Cover with a tight fitting lid.

6. Put in oven and leave to cook for 3 hours, check the progress every hour and give a stir.

7. The beef should be tender with a rich gravy formed in the pot.

8. Serve with mashed potatoes.
