Cooking Time: 30 mins
Serves: 2

Ingredients

  • 2 sachets of Uncle Toby’s Quick Oats Sachets
  • 8 heaped tbsp of Tamar Valley Mild & Creamy yoghurt
  • 2 medium Pink Lady apples
  • 25g cashews, roughly chopped
  • 15g chia seeds
  • 3 tbsp maple syrup
  • 2 tbsp coconut oil, microwaved
  • ½ tsp cinnamon
  • Pinch of salt
  • 200ml water

Equipment

  • Small saucepan
  • Mixing Bowl
  • Baking Tray
  • 2 drinking glasses

Instructions

  1. Preheat oven to 180° Peel apples and cut roughly into 1cm cubes. In a small saucepan on medium heat place the diced apples, water, cinnamon and 1 tbsp of the maple syrup. Let simmer whilst preparing all other elements. Stir frequently and add more water as required if it becomes too dry.
  2. In a bowl mix the oats, cashews, chia seeds, 2 tbsp maple syrup, coconut oil and salt until well combined. Then spread mixture evenly on baking tray and place in oven. Take out of oven after 10 minutes to stir mixture making sure it doesn’t burn on the edges, then place back in oven for 5 more minutes.
  3. Take out your muesli, turn off the apples and let elements cool for 5 minutes.
  4. Take your 2 glasses and begin layering the elements. Begin with 2 heaped tablespoons of yoghurt, then 2 heaped tablespoons of apple, then 4 tbsp of granola. Repeat layering once more until you have 2 layers of each element in your cup and then repeat for the second cup.
