Recipe - Apple, pear and rhubarb compote

Apple, pear and rhubarb compote by Foodland Recipe Kitchen

Ingredients

  • ¼ cup fresh orange juice
  • ¼ cup sugar
  • 2 ripe pears, peeled, cored and cut into quarters
  • 2 apples, peeled, cored and cut into quarters
  • 2 strips of orange zest
  • 1 cinnamon stick
  • 4 sticks rhubarb, trimmed and cut into 4cm lengths

Instructions

This scrumptious and versatile fruit compote is quick and easy to make. Try adding it to your muesli and yoghurt for breakfast, or use it as a pancake topper!

  1. Place the orange juice and sugar in a saucepan, heat to dissolve sugar.
  2. Add prepared pears and apples, orange zest and cinnamon stick.
  3. Cover and cook over medium heat for 5 minutes.
  4. Remove lid, add rhubarb and simmer for a further 5 minutes, turn off heat and allow to sit for 15 minutes before serving.

The compote will keep refrigerated for up to 5 days or can be frozen in small portions.
