Instructions

  • For crumb, heat a small frypan over medium heat, add oil and prosciutto, cook for two minutes, add breadcrumbs and cook for a further five minutes or until toasted.
  • Mix together the dressing ingredients in a small bowl and season with salt & pepper.
  • Cut the peaches and tomatoes into bite sized pieces and arrange on a serving platter.
  • Add the burrata, scatter over the sliced onion and season.
  • Just before serving, pour over the dressing and scatter with prosciutto crumb.
