Mediterranean Potato Salad

Ingredients Checklist

  • 1kg white potatoes, cut into wedges
  • ⅓ cup mixed pitted olives
  • ⅓ cup semi dried tomatoes, coarsely chopped
  • ¼ cup baby capers
  • 150g rocket, roughly chopped
  • ½ red onion, finely sliced
  • 100g Greek feta
  • Sea salt & cracked black pepper

Instructions

  • Place potatoes into a medium saucepan, cover with cold water, season generously with salt and simmer over medium heat until tender.
  • Meanwhile, whisk dressing ingredients in a small bowl.
  • Drain potatoes well, place in a shallow tray, pour over the dressing, toss gently to coat and set aside to cool and absorb the flavours.
  • To assemble, mix through remaining ingredients and transfer to a serving plate.
