Recipe - Mango & Chia Pudding
Mango & Chia Pudding by Foodland Kitchen

Ingredients
- 1 cup yoghurt
- ½ cup chia seeds
- 1 tsp vanilla extract
- 1½ cups milk of choice
- 400g frozen mango, defrosted
- 2 cups granola
- ½ cup coconut flakes, toasted
Equipment
- Medium bowl
- Whisk
- Blender
- Glass jar
Instructions
- Place yoghurt, chia, vanilla and milk into a medium bowl and whisk well to combine.
- Set aside for 10 minutes, then whisk again until smooth. Cover and refrigerate overnight.
- Blitz the mango in a blender until smooth and refrigerate.
- To serve, pour about 3 tablespoons of mango puree into the base of a glass or jar and spoon over the chia pudding.
- Top with granola and sprinkle with coconut flakes.
