Ingredients Checklist
Zucchini & Feta Fritters
- 400g zucchini
- 1 tsp sea salt
- 1 egg
- ¼ cup finely chopped chives
- 100g feta
- 2 tbsp grated parmesan
- ¾ cup plain flour
- ½ tsp baking powder
- ¼ cup olive oil
TO SERVE
- Sour cream
- Chilli sauce, red or green
Instructions
- Coarsely grate the zucchini, place in a bowl, mix through the salt and set aside for ten minutes.
- Place the zucchini in a piece of cheesecloth and squeeze out excess moisture.
- Place zucchini in a bowl with egg, chives, feta, parmesan, flour and baking powder and mix with a rubber spatula until just combined.
- Heat a large non-stick frypan over low/medium heat, add half the oil and pour ¼ cup amounts of batter.
- Cook for two minutes and flip and cook for a further two minutes or until cooked through.
- Drain on paper towel and cook the remaining fritters.
- Serve fritters immediately and top with sour cream and chilli sauce.
