Zucchini & Feta Fritters

  • Coarsely grate the zucchini, place in a bowl, mix through the salt and set aside for ten minutes.
  • Place the zucchini in a piece of cheesecloth and squeeze out excess moisture.
  • Place zucchini in a bowl with egg, chives, feta, parmesan, flour and baking powder and mix with a rubber spatula until just combined.
  • Heat a large non-stick frypan over low/medium heat, add half the oil and pour ¼ cup amounts of batter.
  • Cook for two minutes and flip and cook for a further two minutes or until cooked through.
  • Drain on paper towel and cook the remaining fritters.
  • Serve fritters immediately and top with sour cream and chilli sauce.
