Zucchini Corn Fritters

Zucchini corn fritters make a fantastic healthy lunch or snack, and are also great for school lunchboxes.

Ingredients Checklist

  • 3 medium zucchini
  • 1 cup corn kernels (fresh or canned)
  • 1/2 red onion, diced into small cubes
  • 2 eggs
  • 1/2 cup flour
  • 1 teaspoon baking powder
  • 1/4 cup parmesan cheese
  • Salt and pepper to taste
  • Olive oil

Instructions

  • Preheat oven to 200°C and line a baking tray with baking paper.
  • Grate zucchini into a bowl and set aside.
  • In a separate bowl, add the corn, onion, eggs, parmesan cheese and salt and pepper.
  • Using a paper towel, press down onto the zucchini to soak up the excess liquid from the grated zucchini. Try and remove as much of the liquid as possible.
  • Add zucchini to the other ingredients, add the flour and baking powder and mix together well.
  • Spoon some of the mixture, and using your hands, roll into balls and place on a tray lined with baking paper. Add extra flour if the mixture is too wet.
  • Gently flatten the balls slightly with your fingers to resemble a round disk.
  • Brush with olive oil and place the tray into the oven to cook.
  • Cook for 20 minutes or until slightly golden.
  • Serve with your favourite dipping sauce or enjoy them as they are!
