Ingredients Checklist
Rosé Cocktail Sauce
- 1 cup crème fraîche
- 2/3 cup whole egg mayonnaise
- 2 tbsp tomato sauce
- Juice of 1 lemon
- A dash of Tobasco sauce
- 1/2 tsp smoked paprika
- Salt and ground white pepper to taste
Classic Tartare Sauce
- 1 cup whole-egg mayonnaise
- Juice and zest of 1 lemon juice
- 2 tbsp finely chopped dill pickles
- 2 tbsp finely chopped fresh dill
- 1 tbsp baby capers, roughly chopped
- Salt and ground black pepper to taste
Mango and Chilli Sauce
- 1 large rip mango, peeled and chopped - reserve a few slices for garnish
- Juice and zest of 1 lime
- 1 tbsp chilli sauce
- 2 tbsp fresh coriander leaves, chopped - reserve a few leaves for garnish
- Salt and ground pepper to taste
Instructions
- For the Rosé Cocktail Sauce: Combine all ingredients.
- Cover and refrigerate until required.
- For the Classic Tartare Sauce: Combine all ingredients.
- Cover and refrigerate until required.
- For the Mango and Chilli Sauce: Combine the mango, lime and chilli sauce and blend till smooth.
- Pour into a bowl and the add coriander leaves and salt and ground pepper to taste.
- Garnish with reserve mango, extra coriander leaves and finely chopped chilli (optional)
- Cover and refrigerate until required
