Ingredients Checklist
- 500g pork mince
- 2 tbsp vegetable oil
- ½ cup chopped Thai basil & mint
DRESSING
- 2 tbsp fish sauce
- 1 tbsp brown sugar
- Juice of 2 limes
TO SERVE
- ¼ iceberg lettuce
- Baby cucumber, sliced thinly
- Lime wedges
- Thai basil
- Mint
- Perilla leaves
- 1 shallot, thinly sliced
- ¼ cup toasted desiccated coconut
Instructions
- Heat a large frypan over medium/high heat. Add oil and mince, break up with a wooden spoon and sauté until cooked through. Allow to cool slightly.
- Mix together dressing ingredients in a small bowl. Pour dressing over the mince, add the chopped herbs and mix well to combine.
- To assemble, place the mince mixture in the centre of a large serving plate. Arrange the herbs, lettuce, cucumber and lime around the mince.
- Garnish with toasted coconut and sliced shallot.
