Pork Larb with Vegetables

Ingredients Checklist

  • 500g pork mince
  • 2 tbsp vegetable oil
  • ½ cup chopped Thai basil & mint

Instructions

  • Heat a large frypan over medium/high heat. Add oil and mince, break up with a wooden spoon and sauté until cooked through. Allow to cool slightly.
  • Mix together dressing ingredients in a small bowl. Pour dressing over the mince, add the chopped herbs and mix well to combine.
  • To assemble, place the mince mixture in the centre of a large serving plate. Arrange the herbs, lettuce, cucumber and lime around the mince.
  • Garnish with toasted coconut and sliced shallot.
