Ingredients Checklist
- 2 artichokes
- 200g flat beans
- 2 white zucchini, halved
- 2 baby cos, halved
- 2 tbsp olive oil
- Sea salt & crackled black pepper
- ¾ cup cottage cheese
- 1 tsp chopped parsley + leaves to garnish
DRESSING
- 1 garlic clove, finely chopped
- ½ red onion, finely chopped
- 2 tbsp finely chopped parsley
- 2 tbsp lemon juice
- ¼ cup olive oil
Instructions
- To prepare the artichokes, remove the tough outer leaves, peel the stem, cut in half, remove the choke with a teaspoon and steam for five minutes.
- Mix together the cottage cheese and parsley and place into a small serving bowl.
- Mix together the dressing ingredients in a small bowl.
- Preheat a BBQ to medium/high, coat the vegetables in olive oil, season with salt and pepper and grill until lightly charred.
- Arrange the vegetables onto a serving plate and drizzle with the dressing. Serve with the cottage cheese on the side and garnish with parsley leaves.
