Ingredients Checklist
- 1 x small cob loaf or 4 medium size rolls
- 125g unsalted butter, room temperature
- 4 cloves garlic, crushed
- 2 tsp lemon thyme leaves
- ½ tsp ground smoked paprika
- 2 tbsp grated parmesan
- ½ cup grated mozzarella cheese
- Salt and pepper to taste
- Extra parmesan to serve
Instructions
- Cut the bread into slices approximately 2cm in width. Be careful not to cut through the bottom crust, so it will hold together.
- Mix the butter with garlic, lemon thyme, smoked paprika, grated parmesan and mozzarella, season with salt and pepper.
- Generously spread the butter mix on all slices and then have some over the top of the loaf or rolls.
- Wrap in foil. The bread can be prepared up to this point and refrigerated till ready to serve.
- When ready to serve, preheat the oven to 180°C.
- Pop the prepared bread into the oven and bake for 15-20 minutes.
- To serve, remove from the foil package and lavishly grate extra parmesan over the hot bread and sprinkle with a little salt.
