Place drumsticks in a deep tray, pour buttermilk over chicken, season with salt and pepper, add lemon juice.

Cover with cling wrap, refrigerate for a minimum of 6 hours, preferably overnight.

Preheat oven to 180°C. Place a rack on a baking tray and lightly spray with olive oil to reduce chicken sticking to the rack.

In a shallow bowl, mix together panko crumbs, crushed cornflakes, parmesan cheese, thyme leaves, salt, sweet paprika and chilli powder if using.

Remove the chicken from buttermilk and roll in crumb mix to coat. Place onto prepared rack. Spray top of chicken with olive oil.

Bake in oven for 40 - 45 minutes, until golden and crisp.
