Buttermilk Crumbed Chicken Drumsticks

Ingredients Checklist

  • 8 free range chicken drumsticks
  • 1 cup buttermilk
  • Sea salt and pepper to taste
  • Juice of 1 lemon
  • 2/3 cup panko breadcrumbs
  • 1 cup crushed cornflakes
  • 2 tbsp grated parmesan cheese
  • 2 tsp fresh thyme leaves
  • 1 tsp salt
  • 1 tsp sweet paprika
  • ¼ tsp chilli powder (optional)

Instructions

  • Place drumsticks in a deep tray, pour buttermilk over chicken, season with salt and pepper, add lemon juice.
  • Cover with cling wrap, refrigerate for a minimum of 6 hours, preferably overnight.
  • Preheat oven to 180°C. Place a rack on a baking tray and lightly spray with olive oil to reduce chicken sticking to the rack.
  • In a shallow bowl, mix together panko crumbs, crushed cornflakes, parmesan cheese, thyme leaves, salt, sweet paprika and chilli powder if using.
  • Remove the chicken from buttermilk and roll in crumb mix to coat. Place onto prepared rack. Spray top of chicken with olive oil.
  • Bake in oven for 40 - 45 minutes, until golden and crisp.
