Ingredients Checklist
- 1kg braising beef, cut into large cubes
- 200g smoked bacon, cut into lardons
- 200g whole baby Swiss brown mushrooms, trimmed and cleaned
- 4 cloves garlic, peeled and sliced
- 6 golden shallots, peeled and cut in half
- 6 sprigs of fresh thyme
- 2 fresh bay leaves
- 3 heaped tbsp flour
- 425ml beer
- Salt and pepper to taste
Instructions
- Preheat oven to 140°C.
- Place beef, bacon, mushroom, garlic, shallots, thyme and bay leaves into a large bowl.
- Using your hands toss the flour through the ingredients to coat.
- Transfer to a heavy cast casserole, pour in beer and season to taste. Stir to combine.
- Cover with a tight fitting lid.
- Put in oven and leave to cook for 3 hours, check the progress every hour and give a stir.
- The beef should be tender with a rich gravy formed in the pot.
- Serve with mashed potatoes.
