Apple, pear and rhubarb compote

This scrumptious and versatile fruit compote is quick and easy to make. Try adding it to your muesli and yoghurt for breakfast, or use it as a pancake topper!

The compote will keep refrigerated for up to 5 days or can be frozen in small portions.

Ingredients Checklist

  • ¼ cup fresh orange juice
  • ¼ cup sugar
  • 2 ripe pears, peeled, cored and cut into quarters
  • 2 apples, peeled, cored and cut into quarters
  • 2 strips of orange zest
  • 1 cinnamon stick
  • 4 sticks rhubarb, trimmed and cut into 4cm lengths

Instructions

  • Place the orange juice and sugar in a saucepan, heat to dissolve sugar.
  • Add prepared pears and apples, orange zest and cinnamon stick.
  • Cover and cook over medium heat for 5 minutes.
  • Remove lid, add rhubarb and simmer for a further 5 minutes, turn off heat and allow to sit for 15 minutes before serving.
