1 small zucchini, washed
100 g mozzarella cheese
½ red capsicum, washed
2 spring onions, washed
4 mushrooms, sliced (optional)
1 cup SR flour
1 cup wholemeal SR flour
2 tablespoons olive oil
1 egg
¾ cup low-fat milk
½ cup tomato paste (low salt variety)

You can use this recipe to make one large pizza or to make into several mini pizzas. Your pizza can also be put in the freezer to eat on another day. Makes 8 pieces.

Utensils
Small mixing bowl
Large mixing bowl
Sifter
Wooden spoon
Fork or egg whisk
Oven tray (21 cm x 30 cm)
Knife
Non-stick cooking spray

Method
1. Turn oven to 200oC. Lightly coat tray with spray.
2. Grate zucchini and cheese.
3. Slice spring onions, capsicums and mushrooms.
4. Sift both flours into a large bowl.
5. In a small bowl, mix olive oil, egg and milk.
6. Make a ‘well’ in the centre of the flour. Gradually pour egg mixture into flour, mix into a soft dough.
7. Roll or press out dough to fit your tray.
8. Spread dough with tomato paste.
9. Sprinkle with mozzarella and zucchini. Top with spring onions, capsicum and mushrooms.
10. Bake on TOP shelf of oven for 20 minutes.
